The filling for this vegan pie recipe is super easy to whisk together in one bowl. Any longer and the crust will become brittle and dry, and there’s no coming back from that. I find the sweet spot for baking is around 10 minutes, but if you want it just a bit darker go for closer to 12. One of my biggest pieces of advice is to keep an eye on the crust!
